Notre souhait pour cette deuxième édition fut de reproduire la magie du Drôle d’oiseau 2020 avec une touche d’expérimentation en plus. Le résultat s’avère un vin singulier, texturé et gras, mais conservant une bonne fraicheur. Ce vin gastronomique possède une finale subtilement amère et umami. À accorder judicieusement.
Our wish was to reproduce the magic of the 2020 Drôle d'oiseau with a touch of added experimentation. This is a very singular white wine, textured yet bright; a food wine with a good portion of umami and a slight bitterness. It should be paired carefully.
